I see myself coming here for special occasions or treating myself! The soup bases were definitely top notch and I appreciate the transparency with having all the ingredients shown to us. I definitely believe Liuyishou is a contender in the more refined and modern hot pot category but there are times where I question the difference especially in the meat category if I didn’t eat the Waygu cubes. The Fresh Scallops only needed 2 minutes to be cooked and cooking it in the shell made sure I could find it before it overcooked! Final thoughts The Assorted Balls were silky and delicious but it missed the bouncy/springy texture that hand pounded balls would have. The Signature Fish Paste was fresh and had that bouncy and springy texture that comes with non-frozen fish paste. However, it was difficult to tell how that compared to more upscale hot pot places like Dolar Shop. The beef and lamb slices were displayed beautifully on a circular wooden platter and the meat texture was above par from other Chinese grocery store offerings. The spicy soup was a challenge to eat because the constant boiling only concentrates the spiciness even more. The soup was silky, fragrant and rich which was perfect for non-spicy eaters and vegetarians. The waygu beef (right) was the star of that night with its beautiful marbling. Liu Yi Shou Hot Pot has brought true hot pot nature to the Vancouver Yelp Elites today!
